@LyndonTCorbett I can’t recall because it was a some time ago.. At the time I was using the machine on a daily basic I kept notes and did pull everytime at the same temp. The results were very consistent.
Can you please educate what do you mean by “back to the basics” ?

Note that the Pavoni you see is an old style, with no pressure stat and a special switch to shift from coffee to steaming. Thus, the only regulator is the pressure safety valva, and yes, it indeed should be steaming.
